Description

These Tuscan Garlic Chicken Pita Pizzas are a quick and flavor-packed dinner option! Loaded with juicy garlic-seasoned chicken, melted mozzarella, cherry tomatoes, spinach, and herbs—all baked on a crispy pita crust and ready in under 30 minutes. Perfect for busy weeknights, picky eaters, or when you just need something delicious fast.

  • 4 whole pita breads

  • 1 lb boneless, skinless chicken breasts, diced

  • 3 tbsp olive oil, divided

  • 4 cloves garlic, minced

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • Salt and pepper, to taste

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 1 cup cherry tomatoes, halved

  • ½ cup red onion, thinly sliced

  • ½ cup black olives, sliced

  • ¼ cup fresh basil leaves, chopped (optional)

  • Balsamic glaze (optional, for drizzling)


Instructions

  1. Preheat oven to 400°F (200°C). Place pita breads on a baking sheet and set aside.

  2. In a skillet over medium heat, add 2 tbsp olive oil. Sauté diced chicken until browned and cooked through (5–7 minutes).

  3. Stir in garlic, basil, oregano, thyme, salt, and pepper. Cook for another 1–2 minutes until fragrant. Remove from heat.

  4. Brush each pita with the remaining olive oil.

  5. Divide chicken mixture evenly among pitas.

  6. Top each with mozzarella, Parmesan, cherry tomatoes, red onion, and olives.

  7. Bake for 10–12 minutes, or until cheese is bubbly and edges are crispy.

  8. Let cool slightly. Top with fresh basil and drizzle with balsamic glaze if desired. Serve and enjoy!

Notes

Use whole wheat or gluten-free pita if preferred.
Rotisserie chicken makes a great time-saving swap.
