Description

Juicy Thai Peanut Turkey Burgers packed with fresh ginger, garlic, and herbs, topped with crunchy veggies and a creamy peanut sauce. An easy, flavor-loaded weeknight dinner everyone loves.

For the turkey burgers

  • 1 lb ground turkey (with a little fat for juiciness)

  • ½ cup breadcrumbs (panko or fresh)

  • 3 green onions, finely chopped

  • ¼ cup fresh cilantro, chopped

  • 2 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 2 tbsp soy sauce (low sodium preferred)

  • 1 tbsp fresh lime juice

  • 1 tsp sesame oil

  • ½ tsp salt

  • ¼ tsp black pepper

For the peanut sauce

  • ½ cup creamy peanut butter

  • 2 tbsp soy sauce

  • 1½ tbsp fresh lime juice

  • 1½ tbsp honey

  • 12 tsp sriracha (optional)

  • Warm water, as needed to thin

For assembling

  • 4 burger buns, toasted

  • Shredded carrot

  • Thinly sliced cucumber

  • Red onion, thinly sliced

  • Fresh cilantro leaves


Instructions

  1. Make the patties:
    In a large bowl, gently combine ground turkey, breadcrumbs, green onions, cilantro, garlic, ginger, soy sauce, lime juice, sesame oil, salt, and pepper. Mix just until combined.

  2. Shape:
    Divide mixture into 4 equal portions and form into patties about ¾-inch thick. Do not over-pack.

  3. Cook:
    Heat a grill or skillet over medium-high heat and lightly oil. Cook patties for 5–6 minutes per side, until browned and internal temperature reaches 165°F.

  4. Make the peanut sauce:
    Whisk peanut butter, soy sauce, lime juice, honey, and sriracha. Slowly whisk in warm water until smooth and pourable.

  5. Assemble:
    Spread peanut sauce on toasted buns. Add turkey patty, extra sauce if desired, shredded carrot, cucumber, red onion, and cilantro. Top with bun.

  6. Serve:
    Serve immediately with extra peanut sauce on the side.

Notes

Do not overmix the turkey or the burgers may become dense.

A thermometer is the easiest way to keep turkey burgers juicy.

Peanut sauce can be made up to 3 days ahead and refrigerated.

Great served with a cucumber salad or sweet potato fries.
