Juicy Thai Peanut Turkey Burgers packed with fresh ginger, garlic, and herbs, topped with crunchy veggies and a creamy peanut sauce. An easy, flavor-loaded weeknight dinner everyone loves.
Ingredients
For the turkey burgers

1 lb ground turkey (with a little fat for juiciness)

½ cup breadcrumbs (panko or fresh)

3 green onions, finely chopped

¼ cup fresh cilantro, chopped

2 cloves garlic, minced

1 tbsp fresh ginger, grated

2 tbsp soy sauce (low sodium preferred)

1 tbsp fresh lime juice
-
1 tsp sesame oil
-
½ tsp salt
-
¼ tsp black pepper
For the peanut sauce

½ cup creamy peanut butter
-
2 tbsp soy sauce
-
1½ tbsp fresh lime juice
-
1½ tbsp honey
-
1–2 tsp sriracha (optional)

Warm water, as needed to thin
For assembling

4 burger buns, toasted
-
Shredded carrot
-
Thinly sliced cucumber
-
Red onion, thinly sliced

Fresh cilantro leaves
Instructions

Make the patties:
In a large bowl, gently combine ground turkey, breadcrumbs, green onions, cilantro, garlic, ginger, soy sauce, lime juice, sesame oil, salt, and pepper. Mix just until combined. -
Shape:
Divide mixture into 4 equal portions and form into patties about ¾-inch thick. Do not over-pack. -
Cook:
Heat a grill or skillet over medium-high heat and lightly oil. Cook patties for 5–6 minutes per side, until browned and internal temperature reaches 165°F. -
Make the peanut sauce:
Whisk peanut butter, soy sauce, lime juice, honey, and sriracha. Slowly whisk in warm water until smooth and pourable. -
Assemble:
Spread peanut sauce on toasted buns. Add turkey patty, extra sauce if desired, shredded carrot, cucumber, red onion, and cilantro. Top with bun. -
Serve:
Serve immediately with extra peanut sauce on the side.
Notes
Do not overmix the turkey or the burgers may become dense.
A thermometer is the easiest way to keep turkey burgers juicy.
Peanut sauce can be made up to 3 days ahead and refrigerated.
Great served with a cucumber salad or sweet potato fries.
