  3. Dry the chicken : Pat it thoroughly with paper towels.
  4. Coat : Dip chicken in buttermilk, then dredge in spice mix. Repeat for extra crunch.
  5. Cook :
    • Pan-sear : Heat oil in a cast-iron skillet. Sear skin-side down 5–6 mins until golden. Flip, add butter, and baste.
    • Oven : Bake at 400°F (200°C) for 25–30 mins. Broil 2 mins for crispiness.
  6. Rest : Let chicken sit 5–10 mins before serving.
