For the Soup

Instructions

Heat olive oil in a large pot over medium heat. Add the onion, garlic, and bell peppers. Sauté for 4–5 minutes until softened.

Add diced tomatoes, black beans, corn, broth, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir and bring to a gentle simmer. Cook for 15 minutes.

Meanwhile, make the dumpling dough by mixing masa harina, baking powder, and salt in a bowl. Add broth and melted butter; stir until a soft dough forms. Fold in cheese if using.

Roll dough into 1-inch dumplings and set aside.

Gently drop dumplings into the simmering soup. Cover and cook for 15–20 minutes, or until dumplings are firm and cooked through.
