Ingredients
1 cup uncooked white rice
2 cups water or chicken broth (use broth for more flavor)
1 lb ground beef or turkey (turkey for a lighter option)
1 packet taco seasoning (about 1 oz)
1 can (15 oz) black beans, drained and rinsed
1 cup corn (frozen or canned)
1 cup diced tomatoes (fresh or canned)
1 cup shredded lettuce
1 cup shredded cheddar cheese
½ cup salsa (for topping)
2 tablespoons olive oil
Salt and pepper, to taste
Optional: fresh cilantro and lime wedges for garnish
Instructions
In a medium saucepan, bring water or chicken broth to a boil. Add rice, cover, and reduce heat to low. Simmer for about 15 minutes, or until the liquid is absorbed. Fluff with a fork.
In a large skillet, heat olive oil over medium heat. Add the ground beef or turkey, cooking until browned and crumbled. Drain excess fat.
Stir in taco seasoning and a splash of water, cooking for 1–2 minutes until fully coated.
Add black beans, corn, and diced tomatoes to the skillet, stirring until warmed through.
Divide rice into bowls and top with the taco mixture. Add lettuce, cheese, salsa, and any optional garnishes. Serve immediately.
Notes
Swap white rice for brown rice, quinoa, or cauliflower rice for a healthier twist.
For extra flavor, squeeze fresh lime juice over each bowl before serving.
