  • 4 small sweet potatoes, peeled and diced
  • 1 tbsp avocado oil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp black pepper

For Assembly

  • 8 oz shredded lettuce
  • 1 red onion, thinly sliced
  • 1 pint diced tomatoes (about 10 oz)
  • ½ cup diced pickles
  • ½ cup special sauce

Instructions

  1. Preheat oven to 400°F.
  2. Peel and dice sweet potatoes into bite-sized cubes.
  3. Toss sweet potatoes with avocado oil, garlic powder, onion powder, salt, and pepper.
  4. Spread onto a lined baking sheet in a single layer. Roast for 30–40 minutes, stirring halfway, until tender and slightly crispy.
  5. While potatoes bake, heat a skillet over medium heat. Add ground beef and cook until browned, about 8 minutes.
  6. Stir in Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix well and cook another 1–2 minutes.
  7. Assemble bowls by layering shredded lettuce, roasted sweet potatoes, seasoned beef, red onion, tomatoes, and pickles.
  8. Drizzle with special sauce and serve immediately.
