Ingredients
-
2–3 pounds boneless skinless chicken breasts
-
1 cup sweet chili sauce
-
¼ cup low-sodium soy sauce
-
¼ cup apple cider vinegar
-
3 tablespoons corn oil (or any neutral oil)
-
¼ cup lime juice (fresh recommended)
-
2 cloves garlic, minced
-
1 tablespoon fresh ginger, minced
-
Salt and black pepper, to taste
Instructions
-
In a large zip-style bag, combine sweet chili sauce, soy sauce, vinegar, oil, lime juice, garlic, ginger, salt, and pepper. Seal and squish gently to mix.
-
Flatten chicken slightly between two pieces of plastic wrap using a rolling pin or meat mallet.
-
Add chicken to marinade. Seal bag and refrigerate for at least 2 hours or up to 24 hours.
-
Preheat grill to medium-high heat.
-
Grill chicken for 3–4 minutes per side, occasionally spooning marinade over the top. Cook until internal temp reaches 165°F.
-
Remove from grill, rest for 5 minutes, and serve with fresh veggies or rice.
Notes
-
Don’t over-marinate past 24 hours or the chicken may get too soft.
-
For extra char, sear on high heat for 1 minute at the end of grilling.
-
Leftovers? They’re perfect for wraps, salads, or tacos!
