Description

This Sweet Chili Chicken Marinade infuses juicy chicken breasts with a perfect blend of sweet, tangy, and spicy flavors. It’s ideal for grilling and makes any weeknight dinner feel like a summer BBQ. Quick to prep and totally crave-worthy.


Ingredients

  • 23 pounds boneless skinless chicken breasts

  • 1 cup sweet chili sauce

  • ¼ cup low-sodium soy sauce

  • ¼ cup apple cider vinegar

  • 3 tablespoons corn oil (or any neutral oil)

  • ¼ cup lime juice (fresh recommended)

  • 2 cloves garlic, minced

  • 1 tablespoon fresh ginger, minced

  • Salt and black pepper, to taste


Instructions

  1. In a large zip-style bag, combine sweet chili sauce, soy sauce, vinegar, oil, lime juice, garlic, ginger, salt, and pepper. Seal and squish gently to mix.

  2. Flatten chicken slightly between two pieces of plastic wrap using a rolling pin or meat mallet.

  3. Add chicken to marinade. Seal bag and refrigerate for at least 2 hours or up to 24 hours.

  4. Preheat grill to medium-high heat.

  5. Grill chicken for 3–4 minutes per side, occasionally spooning marinade over the top. Cook until internal temp reaches 165°F.

  6. Remove from grill, rest for 5 minutes, and serve with fresh veggies or rice.

Notes

  • Don’t over-marinate past 24 hours or the chicken may get too soft.

  • For extra char, sear on high heat for 1 minute at the end of grilling.
