- Prepare the chicken:
Cut chicken breasts into bite-sized pieces. Season with garlic powder, salt, and black pepper. Toss with cornstarch until evenly coated. - Make the glaze:
In a small bowl, whisk together sweet chili sauce, rice vinegar, soy sauce, vegetarian oyster sauce, and sesame oil. Set aside. - Cook the chicken:
Heat oil in a large skillet over medium-high heat. Add chicken in a single layer. Cook 4–5 minutes per side until golden brown and crispy. Avoid overcrowding the pan. Cook in batches if needed. Remove and set aside. - Thicken the sauce:
In the same skillet, pour in the glaze mixture. Simmer for about 2 minutes, stirring, until slightly thickened. - Combine and serve:
Return the chicken to the pan and toss until evenly coated and glossy. Serve immediately over rice and garnish with sesame seeds and green onions.
