Description

This Sweet Chili Chicken and Brussels Sprouts recipe combines crispy chicken bites and caramelized Brussels sprouts tossed in a flavorful sweet chili glaze, served over rice for a quick and delicious weeknight dinner.

For the Chicken:

  • 1 pound boneless, skinless chicken thighs or breasts

  • 1/2 cup sweet chili sauce

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon sesame oil

  • 2 cloves garlic, minced

  • 1 teaspoon fresh ginger, grated

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon red pepper flakes (optional)

  • 1 tablespoon cornstarch

For the Brussels Sprouts:

  • 1 pound Brussels sprouts, trimmed and halved

  • 1 1/2 tablespoons olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

For Garnish:

  • 2 tablespoons chopped green onions

  • Sesame seeds


Instructions

  1. In a medium bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, garlic, ginger, black pepper, and red pepper flakes.

  2. Cut chicken into bite-sized pieces, toss in the marinade, cover, and refrigerate for at least 30 minutes or overnight.

  3. Preheat oven to 400°F. Spread Brussels sprouts on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast for 15–20 minutes, flipping halfway.

  4. Preheat air fryer to 380°F. Remove chicken from marinade, letting excess drip off, and toss lightly in cornstarch.

  5. Arrange chicken in the air fryer basket and cook for 12–15 minutes, shaking halfway through, until crispy and cooked to 165°F.

  6. Transfer chicken to a bowl, drizzle with extra sweet chili sauce if desired, garnish with green onions and sesame seeds, and serve with roasted Brussels sprouts.

Notes

Bake chicken at 400°F for 18–22 minutes if you don’t have an air fryer.
Roast extra Brussels sprouts—the crispy leaves are irresistible!
Marinating overnight gives even more flavor.
