This cheesy Stuffed Italian Meatloaf is the ultimate comfort food—juicy ground beef rolled with mozzarella, baked in marinara, and perfect for family dinners.
Ingredients

2 lbs ground beef (80/20)

1 cup breadcrumbs (regular or gluten-free)

2 large eggs

1 tsp garlic powder

1 tsp onion powder

2 tsp Italian seasoning

1 tsp salt

½ tsp black pepper

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup fresh spinach (optional)

1 ½ cups marinara sauce
Instructions

Preheat oven to 375°F (190°C).

In a bowl, mix ground beef, breadcrumbs, eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper until just combined.

In another bowl, combine mozzarella, Parmesan, and spinach.

Flatten the meat mixture into a rectangle on parchment paper. Spread cheese mixture, leaving a 1-inch border.

Roll up jelly-roll style with the seam down.

Transfer to a baking sheet or loaf pan. Bake 45–50 minutes or until internal temp reaches 160°F (71°C).

In the last 10 minutes, spread marinara on top.

Rest 10 minutes before slicing and serving with extra marinara.
Notes
Avoid overmixing the meat to keep it tender.
Swap beef for ground turkey or chicken if desired (add a splash of milk for moisture).
