- 2 pounds Yukon Gold potatoes, peeled and cut into chunks
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter, divided
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 2 tablespoons chopped fresh chives (for garnish)
Instructions
- Prepare the Potatoes:
Wash, peel, and cut the Yukon Gold potatoes into even chunks. Place them in a large pot, cover with cold water, and add a generous pinch of salt. - Boil:
Bring to a boil over medium-high heat. Reduce heat and simmer for 15–20 minutes, or until fork-tender. - Mash:
Drain the potatoes and return them to the pot. Mash while hot until creamy but still slightly textured. - Mix the Cream Base:
In a bowl, whisk together sour cream, heavy cream, minced garlic, smoked paprika, salt, and pepper. - Combine:
Fold the cream mixture into the mashed potatoes until smooth. Stir in shredded cheddar and 2 tablespoons of butter. - Bake:
Preheat oven to 350°F (175°C). Transfer mixture to a greased baking dish. Dot the top with remaining butter.
Bake for 25–30 minutes, until golden and bubbly. - Garnish & Serve:
Let cool slightly. Sprinkle with chopped chives before serving.
Notes
- For extra browning, broil for 1–2 minutes at the end.
