Description

Tender, juicy Spinach and Feta Chicken Rolls made with seasoned chicken breasts, stuffed with a creamy spinach and feta filling, then seared and baked to golden perfection. A delicious, family-friendly meal that’s easy enough for busy weeknights and impressive enough for guests!

For the chicken rolls:

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon dried oregano

  • Salt and pepper to taste

For the spinach and feta filling:

  • 2 cups fresh spinach, chopped

  • 1/2 cup crumbled feta cheese

  • 1/4 cup grated Parmesan cheese (optional)

  • 1 tablespoon cream cheese (optional, for added creaminess)

  • 1 tablespoon fresh parsley, chopped (optional)

For cooking:

  • 1 tablespoon olive oil (for searing)


Instructions

  1. Preheat oven to 375°F.

  2. Place chicken breasts between two sheets of plastic wrap and pound to 1/4-inch thickness.

  3. Season chicken with garlic powder, onion powder, oregano, salt, and pepper.

  4. In a bowl, combine spinach, feta, Parmesan, cream cheese, and parsley.

  5. Spread the filling over each chicken breast, then roll up tightly and secure with toothpicks.

  6. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.

  7. Sear the chicken rolls on all sides until golden brown, about 2-3 minutes per side.

  8. Transfer the seared rolls to a baking dish and bake for 20-25 minutes, or until internal temperature reaches 165°F.

  9. Let rest for a few minutes before serving.

Notes

If using frozen spinach, thaw and squeeze out excess moisture before mixing.
Don’t overfill the chicken rolls to prevent the filling from leaking during cooking.
Toothpicks help keep the rolls tightly closed while searing and baking.
