Ingredients
4 boneless, skinless chicken breasts
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
1 tablespoon olive oil
1 tablespoon unsalted butter
3 fresh jalapeños, sliced (seeds removed for less heat)
3 cloves garlic, minced
½ cup chicken broth
½ cup heavy cream
½ cup shredded cheddar cheese
¼ cup cream cheese, softened
1 teaspoon smoked paprika
1 tablespoon chopped fresh cilantro (optional, for garnish)
Instructions
Season the Chicken: Season both sides of the chicken breasts with salt, black pepper, and garlic powder.
Sear the Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Cook the chicken for 5–7 minutes per side until golden and fully cooked (internal temp 165°F). Remove from skillet and set aside.
Cook the Jalapeños: In the same skillet, sauté sliced jalapeños for 2–3 minutes. Add minced garlic and cook for 1 more minute.
Make the Sauce: Add chicken broth and simmer 2–3 minutes. Reduce heat to low, then stir in heavy cream, cheddar, cream cheese, and smoked paprika. Stir until smooth.
Combine & Serve: Return the chicken to the skillet, spoon sauce over it, and simmer 2–3 minutes. Garnish with cilantro and serve hot!
Notes
Leave some jalapeño seeds in if you love extra heat.
Substitute thighs for chicken breasts if preferred.
This dish pairs well with rice, mashed potatoes, or roasted veggies.
