Description

These Spicy Honey Lime Chicken skewers are sweet, zesty, and fiery in all the right ways. Marinated in a bold mix of honey, lime, garlic, and Sriracha, then grilled to juicy perfection—this crowd-pleasing dish is perfect for weeknights, cookouts, or anytime you want dinner to shine!


Ingredients

  • pounds boneless skinless chicken thighs (or breasts/tenders), cut into 2-inch pieces

  • 2 tbsp chopped cilantro or parsley (for garnish)

  • Lime wedges (for serving)

For the Honey Lime Marinade + Glaze:

  • 3 tbsp soy sauce (low sodium recommended)

  • 6 tbsp honey or maple syrup

  • 1 tsp lime zest

  • 3 tbsp fresh lime juice (about 2 limes)

  • 4 garlic cloves, minced (or ½ tsp garlic powder)

  • 1½ tbsp fresh ginger, grated

  • 1 tbsp vegetable oil

  • 1½ tbsp Sriracha (adjust to taste)

  • 1¼ tsp kosher salt

  • ½ tsp cornstarch (optional, for thickening glaze)


Instructions

  1. Make the Marinade: In a bowl or blender, whisk together all marinade ingredients until smooth.

  2. Marinate Chicken: Place chicken and half the marinade in a sealed bag or container. Marinate for 30 minutes (room temp) or up to 12 hours (refrigerated). Tip: If marinating overnight, omit lime juice and use extra zest.

  3. Make the Glaze: Stir cornstarch into the reserved marinade and microwave for 1 minute to thicken. Set aside.

  4. Prep Grill: Scrape, clean, and oil the grill. Heat to medium-high. Soak wooden skewers if using.

  5. Assemble Skewers: Thread marinated chicken onto skewers. Pat dry and lightly spray with oil. Discard used marinade.

  6. Grill: Cook skewers 9–12 minutes, turning occasionally and basting with glaze. Chicken should be golden and reach 160°F.

  7. Serve: Rest for 5 minutes. Garnish with cilantro and lime. Drizzle with extra glaze if desired.

Notes

  • For less spice, reduce Sriracha or substitute with sweet chili sauce.

  • No grill? Use a grill pan or broil skewers on high, flipping once.
