Ingredients
Salad

6 cups chopped romaine lettuce

6 cups cubed cooked chicken

1½ cups corn

1½ cups black beans

1½ cups chopped tomatoes

1 avocado, diced

½ red onion, diced

¾ cup shredded cheddar cheese

1 cup crushed tortilla chips

Handful of chopped cilantro
Dressing

½ cup plain Greek yogurt (nonfat recommended)

3 Tablespoons extra virgin olive oil

2 teaspoons honey
-
2 teaspoons apple cider vinegar

1 teaspoon minced garlic
-
2 Tablespoons lime juice
-
½ jalapeño, finely diced

2 heaping teaspoons taco seasoning (mild)

Salt, to taste
Instructions

In a large bowl, combine the romaine, chicken, corn, black beans, tomatoes, avocado, red onion, cheddar, and cilantro.

In a separate bowl, whisk together all dressing ingredients except the salt. Taste and add salt as needed.

Pour dressing over the salad and toss to coat.

Add crushed tortilla chips right before serving for the best crunch.

Notes
To make ahead: Combine salad and dressing separately. Add dressing and chips just before serving.
Add extra lime or jalapeño if you like a bigger citrusy or spicy punch.
