Ingredients
For the Filling

5 ripe bananas, sliced

1 cup granulated sugar

1/2 cup (1 stick) unsalted butter, melted

For the Cobbler Batter

1 cup self-rising flour

1 cup whole milk

1/2 cup sugar

1/2 tsp ground nutmeg (optional)

Instructions

Preheat oven: Preheat to 350°F (175°C). Lightly grease a baking dish with butter or nonstick spray.

Make filling: In a large bowl, gently mix sliced bananas, sugar, melted butter, vanilla, cinnamon, and salt. Set aside for a few minutes.

Make batter: In a separate bowl, whisk self-rising flour, milk, sugar, and nutmeg (if using) until just combined. Small lumps are okay.

Assemble: Pour batter into the baking dish without stirring. Spoon banana mixture evenly over the batter without mixing.

Bake: Bake 45–50 minutes until golden brown and bubbly, and the center is set.

Cool & serve: Rest 10 minutes before serving. Top with ice cream, whipped cream, nuts, or caramel if desired.
Notes
Ripe bananas are key (spotty is perfect!) for the sweetest flavor and best texture.
Don’t stir after layering—the batter rises around the bananas for that classic cobbler look.
For extra crunch, add pecans or walnuts on top after baking (or during the last 10 minutes).
Leftovers keep well in the fridge and reheat beautifully.
