Ingredients
- 8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 green bell peppers, chopped
- 3 stalks of celery, sliced
- 4 cloves of garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions
- Prepare the Chicken : Pat the chicken thighs dry with paper towels and season generously with salt and pepper.
- Sear the Chicken : Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs skin-side down and sear until golden brown (about 5–7 minutes per side). Remove and set aside.
- Create the Base Sauce : In the same skillet, reduce heat to medium and sauté onions, bell peppers, and celery until softened (about 5 minutes). Add minced garlic and cook for another minute.
- Simmer the Chicken : Stir in diced tomatoes, chicken broth, Worcestershire sauce, thyme, and paprika. Return the chicken thighs to the skillet, nestling them into the sauce. Cover and simmer on low heat for 45–60 minutes, or until the chicken is tender.
- Serve : Garnish with fresh herbs if desired and serve hot over rice, mashed potatoes, or with your favorite sides.
Notes
For a spicier version, add cayenne pepper or red pepper flakes to the sauce.
Use boneless chicken thighs if you prefer, but adjust cooking time accordingly.
