This Slow Cooker Fiesta Chicken is the ultimate creamy, comforting Tex-Mex dish! Packed with tender shredded chicken, black beans, corn, and a zesty ranch-lime sauce, it’s an effortless weeknight meal that practically cooks itself.   • 4 boneless, skinless chicken breasts

  • 1 packet ranch dressing seasoning (regular or fiesta)

  • 1 tsp onion powder

  • ½ tsp black pepper (adjust to taste)

  • 1 can (10 oz) Rotel diced tomatoes with green chilies

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) corn, drained

  • 8 oz cream cheese (block style)

  • ½ cup chicken broth

  • Juice of 1 lime (freshly squeezed)

Optional Toppings:

  • Sliced avocado

  • Fresh cilantro

  • Shredded cheese

  • Lime wedges


Instructions

  1. Layer Ingredients: Place chicken breasts in the bottom of your slow cooker. Add drained black beans, corn, Rotel tomatoes, onion powder, ranch seasoning, and black pepper.

  2. Add Liquids: Squeeze lime juice over the top, then pour in chicken broth. Place the cream cheese block right on top—don’t stir!

  3. Cook: Cover and cook on HIGH for 3–4 hours or LOW for 5–6 hours, until chicken reaches 165°F and is tender.

  4. Shred & Mix: Remove chicken, shred with two forks, then return it to the pot. Stir until the cream cheese melts and creates a creamy sauce.

  5. Serve: Spoon over rice, stuff into tortillas, or serve as a dip. Garnish with avocado slices, cilantro, and a squeeze of fresh lime.
