Ingredients
-
4 boneless, skinless chicken breasts
-
1 can (14 oz) diced tomatoes
-
1 can (8 oz) tomato sauce
-
3 cloves garlic, minced
-
1 teaspoon dried basil
-
1 teaspoon dried oregano
-
1/2 teaspoon salt
-
1/4 teaspoon black pepper
-
1/2 cup heavy cream
-
1/4 cup grated Parmesan cheese
-
Fresh basil leaves, for garnish
Instructions
-
Place chicken breasts in the bottom of a 6-quart slow cooker.
-
In a medium bowl, combine diced tomatoes (with juices), tomato sauce, garlic, dried basil, oregano, salt, and pepper. Pour over the chicken.
-
Cover and cook on low for 4–5 hours, until chicken is tender and cooked through.
-
Remove chicken from slow cooker and stir heavy cream and Parmesan cheese into the sauce until smooth.
-
Return chicken to the slow cooker, spoon sauce over the top, and let sit for 10–15 minutes.
-
Serve over pasta, rice, or with bread, garnished with fresh basil.
Notes
Boneless, skinless chicken thighs can be used instead of breasts for extra tenderness.
For a thicker sauce, add an extra tablespoon of Parmesan or simmer uncovered briefly.
Freeze leftovers without the cream; add cream when reheating for best texture.
