Description

This Slow Cooker Cilantro Lime Chicken is a flavorful, fuss-free dinner perfect for busy weeknights. With juicy shredded chicken, zesty lime, and fresh cilantro, this crock pot recipe is perfect for tacos, rice bowls, salads, or meal prep.


Ingredients

  • 3 boneless skinless chicken breasts

  • 1 can (15 ounces) tomato sauce

  • 1 bunch cilantro, chopped

  • 1 lime, juiced

  • 1 tablespoon chili powder

  • 1 tablespoon cumin

  • ½ teaspoon garlic salt

  • ½ teaspoon salt

  • ½ teaspoon pepper


Instructions

  1. Place chicken breasts in the bottom of the slow cooker.

  2. Sprinkle chili powder, cumin, garlic salt, salt, and pepper over the chicken.

  3. Add chopped cilantro and lime juice on top.

  4. Pour tomato sauce over everything.

  5. Cover and cook on low for 6–8 hours or high for 3–4 hours, until the chicken is tender and shreds easily.

  6. Shred the chicken with two forks and stir it back into the sauce.

  7. Serve warm over rice, in tacos, or however you like. Enjoy!

Notes

Chicken thighs can be used for extra juiciness.
Add a chopped jalapeño if you want some heat.
Leftovers can be stored in the fridge for up to 4 days or frozen for later use.
