Description

This Slow Cooker Cajun Potato Soup is creamy, cozy, and packed with bold Cajun flavor. Loaded with tender potatoes, vegetables, smoky spices, and a touch of cream, it’s the perfect hands-off comfort meal for busy days and chilly nights.


Ingredients

  • 6 cups peeled and diced potatoes

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 1 bell pepper, chopped (any color)

  • 2 celery stalks, diced

  • 1 teaspoon smoked paprika

  • 1 teaspoon Cajun seasoning (more to taste)

  • 1/2 teaspoon dried thyme

  • Salt and pepper, to taste

  • 4 cups chicken or vegetable broth

  • 1 cup heavy cream or half-and-half

  • 1 tablespoon butter

  • 1/2 cup shredded cheddar cheese (optional)

  • 1/4 cup chopped green onions (for garnish)

  • 1/4 teaspoon cayenne pepper (optional, for heat)


Instructions

  1. Add the potatoes, onion, garlic, bell pepper, celery, smoked paprika, Cajun seasoning, thyme, salt, pepper, and broth into your slow cooker.

  2. Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the potatoes are soft.

  3. Mash some of the potatoes using a potato masher or immersion blender for a thicker texture, leaving chunks for heartiness.

  4. Stir in the cream, butter, and optional cayenne. Cook on High for 15–20 minutes until warmed through.

  5. Taste and adjust seasonings.

  6. Serve hot with shredded cheddar cheese and green onions on top.

Notes

  • Add more Cajun seasoning or cayenne for extra heat.

  • For a lighter option, substitute half-and-half for heavy cream.

  • Use pre-chopped veggies to save time on busy days.

 

  • To thicken further, mash more potatoes or simmer uncovered for a few minutes.
