  • 1 tablespoon olive oil (optional)

  • 1 medium yellow onion, finely diced

  • 3 cloves garlic, minced

  • 1 tablespoon Dijon mustard

  • 1 tablespoon Worcestershire sauce

  • 2 cups beef broth (low sodium preferred)

  • 20 oz refrigerated cheese tortellini

  • 1 cup sour cream (full-fat for best texture)

  • 1/2 teaspoon salt (adjust to taste)

  • 1/4 teaspoon black pepper

  • Optional: 1 cup sliced mushrooms

  • Optional garnish: chopped fresh parsley or grated Parmesan


Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it up, until browned. Drain excess fat if needed.

  2. Add olive oil if necessary, then stir in the diced onion and garlic. Cook for 2–3 minutes until softened and fragrant.

  3. Stir in Dijon mustard and Worcestershire sauce. Pour in the beef broth, scraping up any browned bits from the bottom of the skillet.

  4. Add the cheese tortellini and optional mushrooms. Cover and simmer for 5–7 minutes, stirring occasionally, until tortellini are tender.

  5. Remove the skillet from heat. Gently fold in the sour cream until the sauce is creamy and smooth.

  6. Season with salt and black pepper to taste. Garnish with parsley or Parmesan before serving.

Notes

  • For a lighter version, substitute ground turkey or Greek yogurt in place of sour cream.

  • Sauce thickens as it rests; add a splash of broth if reheating.

  • Best enjoyed fresh, but leftovers store well for up to 3 days refrigerated.
