Description

These Sheet Pan BBQ Chicken Nachos are a quick, cheesy, and crowd-pleasing meal or snack, loaded with juicy BBQ chicken, melty cheese, and zesty toppings—perfect for game night, busy weeknights, or casual get-togethers.

Ingredients

Scale
  • Tortilla chips

  • 2 cups cooked shredded chicken

  • 1/2 cup BBQ sauce (plus extra for drizzling)

  • 2 cups shredded cheese (cheddar or Mexican blend)

  • 1/3 cup thinly sliced red onions (optional)

  • 1/4 cup pickled jalapeños (optional)

  • 1/4 cup white queso (for drizzling)

  • Chopped fresh cilantro, for garnish

Instructions

  1. Preheat oven to 350°F and line a large baking sheet with parchment paper or a silicone baking mat.

  2. In a bowl, mix the shredded chicken with BBQ sauce until evenly coated.

  3. Layer half the tortilla chips on the baking sheet, followed by half the BBQ chicken and half the shredded cheese.

  4. Repeat with remaining chips, chicken, and cheese.

  5. Top with red onions and pickled jalapeños if using.

  6. Bake for 11–13 minutes, or until the cheese is melted and bubbly.

  7. Drizzle with queso and a bit more BBQ sauce, then bake for an additional 3–4 minutes.

  8. Garnish with chopped cilantro and serve immediately.

Notes

Use rotisserie chicken for a quick shortcut.
Swap BBQ sauce flavors based on your spice preference (smoky, sweet, or spicy).
Add extras like black beans, corn, or avocado if desired.
Leftovers can be reheated under the broiler to keep the chips crisp.
