Description
This quick and flavorful Scallion Chicken features tender chicken thighs marinated in soy sauce, oyster sauce, and pan-fried to golden perfection with scallions. Perfect for busy weeknights!
Ingredients
1 lb chicken thighs (skin on/off, boneless or bone-in)
2 tbsp regular soy sauce
1 tbsp dark soy sauce (optional, for color & flavor)
1 tbsp oyster sauce
1/2 tsp black pepper
1 tbsp corn starch
1 tbsp oil (vegetable or canola)
5 scallions, sliced (separate white and green parts)
Instructions
In a bowl, mix chicken thighs with regular soy sauce, dark soy sauce, oyster sauce, black pepper, and corn starch. Let marinate for 10 minutes.
Meanwhile, slice scallions, keeping the white and green parts separate.
Heat oil in a non-stick skillet over medium heat. Add chicken and pan-fry until fully cooked and lightly browned.
Add white parts of the scallions to the pan. Cook until softened.
If using bone-in or thicker cuts, cover with a lid and cook through.
Add green scallion parts and stir for 10–20 seconds to wilt.
Serve hot over rice or noodles. Sprinkle with extra scallions or pepper if desired.
Notes
For best flavor and texture, stick with chicken thighs—breasts may turn out dry.
You can skip dark soy sauce and use just 1.5 tbsp of regular soy sauce instead.
