  • 5 bone-in, skin-on chicken thighs

  • 1 ½ lbs yellow potatoes, chopped

  • 1 small onion, sliced

  • 4 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tbsp dried Italian seasoning

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 tsp paprika

  • Salt and black pepper to taste

  • ½ cup grated Parmesan

  • Fresh thyme for garnish


Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a large casserole dish, toss potatoes and onions with olive oil, garlic, Italian seasoning, salt, and pepper.

  3. Pat chicken thighs dry and season generously on both sides with thyme, rosemary, paprika, salt, and pepper.

  4. Nestle chicken thighs on top of the vegetables, skin-side up.

  5. Bake for 45–55 minutes, or until the chicken skin is crispy and the potatoes are tender.

  6. Sprinkle Parmesan over the top and return to the oven for 5 minutes to melt.
