Ingredients
-
5 bone-in, skin-on chicken thighs
-
1 ½ lbs yellow potatoes, chopped
-
1 small onion, sliced
-
4 cloves garlic, minced
-
2 tbsp olive oil
-
1 tbsp dried Italian seasoning
-
1 tsp dried thyme
-
1 tsp dried rosemary
-
1 tsp paprika
-
Salt and black pepper to taste
-
½ cup grated Parmesan
-
Fresh thyme for garnish
Instructions
-
Preheat oven to 400°F (200°C).
-
In a large casserole dish, toss potatoes and onions with olive oil, garlic, Italian seasoning, salt, and pepper.
-
Pat chicken thighs dry and season generously on both sides with thyme, rosemary, paprika, salt, and pepper.
-
Nestle chicken thighs on top of the vegetables, skin-side up.
-
Bake for 45–55 minutes, or until the chicken skin is crispy and the potatoes are tender.
-
Sprinkle Parmesan over the top and return to the oven for 5 minutes to melt.
-
Garnish with fresh thyme and serve warm.
Notes
-
For extra crispiness, broil the casserole for the last 2–3 minutes.
Swap potatoes for cauliflower or zucchini for a lighter option.
Leftovers reheat beautifully and stay juicy thanks to the bone-in chicken thighs.
