Description

This cheesy, flavor-packed Santa Fe Chicken is the ultimate one-skillet meal! Juicy chicken breasts are seared and baked with black beans, corn, Ro-tel tomatoes, and melty cheese for a bold and satisfying dinner that’s ready in 30 minutes. Perfect for busy weeknights or family dinners!


Ingredients

  • 2 large chicken breasts

  • ½ teaspoon garlic powder

  • ½ teaspoon chili powder

  • Salt & pepper to taste

  • 2 tablespoons olive oil

  • ½ medium onion, chopped

  • 1 (10 oz) can Ro-tel diced tomatoes & green chilies, drained

  • 1 (14 oz) can black beans, drained & rinsed

  • 1 (12 oz) can corn, drained

  • ½ teaspoon smoked paprika

  • 1 cup Mexican cheese blend

  • Fresh cilantro, chopped (optional)


Instructions

  1. Preheat oven to 400°F and position rack in the middle.

  2. Slice chicken breasts in half lengthwise to create 4 thin cutlets. Season both sides with garlic powder, chili powder, salt, and pepper.

  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden. Remove from skillet and set aside.

  4. Add chopped onion to the same skillet and sauté for 5 minutes until softened and lightly browned.

  5. Stir in Ro-tel tomatoes, black beans, corn, and smoked paprika. Cook for 2–3 minutes, scraping up any browned bits from the bottom.

  6. Return chicken to skillet. Spoon tomato-bean mixture over chicken and sprinkle with cheese.

  7. Bake uncovered for 5–7 minutes, or until chicken reaches 165°F and cheese is melted. Broil for an extra minute if desired.

  8. Garnish with chopped cilantro and serve hot!

Notes

Use chicken thighs if preferred—just adjust cook time accordingly.
Add cayenne or hot Ro-tel if you like more heat.
Serve over rice, in tacos, or with tortilla chips for a full Tex-Mex meal.
Store leftovers in an airtight container for up to 3 days.
