Santa Fe Chicken Foil Packets are a quick, mess-free dinner packed with Tex-Mex flavors. Juicy chicken breasts are topped with black beans, corn, peppers, salsa, and melty cheese—all wrapped in foil and cooked to perfection. Perfect for busy nights, picky eaters, and backyard grilling!
Ingredients
4 boneless skinless chicken breasts (7–8 oz each)
½ teaspoon chili powder
Salt and pepper to taste
1 can (15 oz) black beans, drained and rinsed
2 cups frozen corn, thawed
1 cup diced bell peppers (any color)
¾ cup salsa or 1 can Rotel Diced Tomatoes & Green Chilies, drained
½ cup shredded Mexican cheese blend or Monterey Jack (about 2 oz)
Optional toppings: chopped cilantro, diced tomatoes, sliced jalapeños
Instructions
Preheat grill to medium-high heat (or oven to 400°F).
Lay out four large pieces of foil and spray with cooking spray.
Place one chicken breast on each piece of foil. Season with chili powder, salt, and pepper.
Divide the beans, corn, peppers, and salsa (or Rotel) evenly over the chicken.
Fold the foil over the chicken and seal tightly to form packets.
Grill packets, vegetable side down, for 10 minutes.
Flip and grill another 10–12 minutes or until chicken reaches 165°F.
Carefully open the packets, top with cheese, and place on a baking pan.
Return to grill or oven for 2–3 minutes until cheese is melted.
Add desired toppings and serve warm.
Notes
Oven Option: Bake packets at 400°F for 25–30 minutes if you prefer not to grill.
