3–4 boneless, skinless chicken breasts

8 oz cream cheese, softened

1 cup fresh spinach, chopped

1 cup shredded mozzarella cheese

1 tsp garlic powder

1 tsp Italian seasoning

1–2 tbsp olive oil

Salt & pepper to taste
Sauce

1 cup low-sodium chicken broth

2 tbsp fresh lemon juice

¼ cup grated Parmesan cheese
Instructions

Preheat your oven to 375°F (190°C).

Carefully slice a pocket into the thickest part of each chicken breast.

In a mixing bowl, combine cream cheese, spinach, mozzarella, garlic powder, and Italian seasoning until smooth and well blended.

Generously stuff each chicken breast with the mixture, securing the opening with toothpicks if needed.

Heat olive oil in an oven-safe skillet over medium heat. Sear each chicken breast for 3–4 minutes per side, until golden brown.

Pour chicken broth around the chicken and drizzle lemon juice over the top.

Transfer the skillet to the oven and bake uncovered for 25–30 minutes, or until the internal temperature reaches 165°F (75°C).

Remove from the oven and sprinkle Parmesan cheese over the top.

Notes
Frozen spinach works too—just thaw and squeeze out all moisture before mixing.
Use toothpicks to keep the cheesy filling inside during baking.
