Ingredients

1 package stuffing mix (6 ounces)

3/4 cup melted butter

3 cups chopped zucchini

2 cups cooked chicken breast, cubed

1 can condensed cream of chicken soup (10–3/4 ounces, undiluted)

1 medium carrot, grated

1/2 cup diced onion

1/2 cup sour cream
Instructions

Preheat oven to 350°F (175°C). Grease an 11×7-inch baking dish.

In a large bowl, mix stuffing mix with melted butter until well-coated. Reserve 1/2 cup for topping.

To the remaining stuffing, add zucchini, chicken, soup, carrot, onion, and sour cream. Stir well.

Spread mixture into prepared dish. Top with reserved stuffing mix.

Bake for 40-45 minutes, until bubbly and golden brown. Cool slightly before serving.
Notes
Substitute cream of mushroom soup for a different flavor twist.
