Description

These Rotisserie Chicken Hawaiian Sliders are loaded with tender shredded rotisserie chicken, melty pepper jack cheese, creamy avocado, and spicy mayo—all tucked into buttery Hawaiian rolls. Perfect for quick weeknight dinners, potlucks, or game-day snacking!


Ingredients

  • 12 Hawaiian rolls

  • 2 cups rotisserie chicken, shredded

  • 12 slices pepper jack cheese

  • 1 cup lettuce, shredded (add after baking for crunch)

  • ½ cup pickles, sliced

  • ½ cup spicy mayo

  • ¼ cup mashed avocado, guacamole, or sliced avocado

  • 1 tbsp butter, softened

Butter Sauce

  • 1 tbsp butter, melted

  • ½ tbsp Dijon mustard

  • ½ tsp poppyseeds


Instructions

  1. Preheat your oven to 350°F.

  2. Shred the rotisserie chicken and set aside.

  3. Slice all 12 Hawaiian rolls in half. Place the bottom halves in a casserole dish, side by side.

  4. Spread spicy mayo on the bottom halves of the rolls (and top halves if desired).

  5. Layer half of the pepper jack cheese slices evenly over the mayo.

  6. Spread mashed avocado or layer guacamole/sliced avocado on top of the cheese.

  7. Add shredded chicken evenly across each roll bottom.

  8. Top with sliced pickles and remaining cheese slices.

  9. Place the top halves of the rolls over the filling.

  10. In a small bowl, stir together melted butter, Dijon mustard, and poppyseeds.

  11. Brush the butter mixture over the tops of the rolls.

  12. Cover the dish with foil and bake for 20–25 minutes, or until the cheese is melted.

  13. Remove foil and bake uncovered for an additional 3–5 minutes, until golden brown.

  14. Add shredded lettuce after baking for extra crunch.

  15. Serve hot or chilled with extra spicy mayo if desired. Enjoy!

Use pre-shredded rotisserie chicken to save time.
Customize the spice level by using a milder cheese or adding extra hot sauce.
