1 lb breakfast sausage (turkey, chicken, spicy, or mild)

2 cups shredded cheddar cheese

1 can (10 oz) Rotel diced tomatoes with green chilies, well drained

1½ cups Bisquick or other baking mix

½ tsp garlic powder (optional)
Instructions

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Drain the Rotel extremely well—press through a mesh strainer or blot with paper towels to remove excess moisture.

In a large bowl, combine the sausage, cheddar cheese, drained Rotel, Bisquick, and garlic powder.

Mix thoroughly using your hands or a sturdy spoon until the mixture comes together.

Roll into 1-inch balls (or use a cookie scoop for easy portioning) and place them on the baking sheet.

Bake for 20–25 minutes, or until golden brown and fully cooked.

For extra heat, use spicy sausage or add a pinch of cayenne.

Freshly shredded cheddar melts better than pre-shredded cheese.

Freeze unbaked balls on a sheet pan, then store in a zip-top bag for up to 2 months. Bake from frozen, adding 5 extra minutes.
