Description

This Rich Chicken Stroganoff is a creamy, comforting, weeknight-friendly dish made with tender chicken bites, buttery mushrooms, and a velvety sour-cream sauce. Perfect over mashed potatoes, noodles, or rice.

For the Chicken

  • 2 chicken breast halves

  • 1/2 tsp garlic powder

  • Salt and black pepper, to taste

  • Flour, for coating

  • 2 tbsp olive oil, plus extra as needed

For the Sauce

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 8 oz cremini mushrooms, sliced

  • 1/2 medium onion, chopped

  • 1 tbsp Dijon mustard

  • 1 tbsp Worcestershire sauce

  • 3 cloves garlic, minced

  • 2/3 cup chicken broth

  • 1/2 cup full-fat sour cream

  • Salt and black pepper, to taste


Instructions

  1. Cut chicken into 1-inch pieces. Season with garlic powder, salt, and pepper, then coat lightly in flour.

  2. Heat olive oil in a skillet over medium-high heat. Brown half the chicken for 3 minutes per side. Transfer to a plate. Repeat with additional oil if needed.

  3. Reduce heat to medium. Add olive oil and butter. Sauté mushrooms and onion for 6–8 minutes until browned.

  4. Stir in Dijon, Worcestershire sauce, and garlic. Cook 1 minute until fragrant.

  5. Pour in chicken broth and scrape up browned bits. Return chicken to the skillet and simmer 2 minutes.

  6. Reduce heat to low and stir in sour cream. Warm gently without boiling. Season to taste and serve.

Notes

  • Full-fat sour cream gives the best creamy texture.

  • Serve over egg noodles, rice, mashed potatoes, or cauliflower mash.

 

  • Don’t boil after adding sour cream to avoid curdling.
