  • 1 teaspoon thyme leaves

  • 1 cup ricotta cheese

  • 1 cup grated Parmesan cheese

  • 2 large eggs

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • Pumpkin seeds, for garnish


Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C).

  2. Prepare Puff Pastry: Roll out puff pastry to fit your tart pan. Press it gently into the corners, trim the edges, and prick the bottom with a fork. Set aside.

  3. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add onion and garlic, cooking until translucent. Stir in mushrooms and cook until tender and browned (5–7 minutes). Season with salt, pepper, thyme, and sage. Remove from heat and let cool slightly.

  4. Mix Filling: In a large bowl, combine pumpkin puree, ricotta, half the Parmesan, and eggs. Season lightly with salt and pepper, then fold in the sautéed mushrooms.

  5. Assemble Tart: Pour filling into the prepared pastry shell, spreading evenly. Sprinkle with remaining Parmesan.
