Ingredients

3–4 lbs beef chuck roast

1 large onion, sliced

3 cloves garlic, minced

1 cup beef broth

½ cup barbecue sauce (or your favorite sauce)

2 tablespoons Worcestershire sauce

1 tablespoon brown sugar

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

6–8 sandwich buns

Optional toppings: pickles, coleslaw, sliced onions

Instructions

Pat beef chuck roast dry. Season all sides with salt, pepper, smoked paprika, and cumin.

Place sliced onion and minced garlic in the bottom of a slow cooker or Dutch oven.

Set beef on top of onions. Pour in beef broth, barbecue sauce, Worcestershire sauce, and brown sugar.

Cover and cook:

Slow Cooker: Low for 8-10 hours

Dutch Oven: 300°F (150°C) for 4-5 hours

Remove beef and shred with two forks.

Return shredded beef to cooking juices and stir to combine.

Toast buns if desired.

Pile shredded beef onto buns, top with cheese slices if using, and add any optional toppings.

Notes
For extra flavor, sear the beef on all sides before slow cooking.
