Description

This cozy Potsticker Soup is a quick, flavor-packed comfort meal ready in just 20 minutes! Tender dumplings swim in a rich sesame-ginger broth with fresh veggies, soy sauce, and green onions — the perfect one-pot wonder for busy weeknights or chilly days.

Ingredients

Scale
  • 1 tablespoon sesame oil

  • 3 cloves garlic, minced

  • 1 tablespoon grated fresh ginger

  • 6 cups chicken or vegetable broth

  • 2 tablespoons soy sauce

  • 1 teaspoon rice vinegar (optional)

  • 12 frozen potstickers (any variety)

  • 1 cup sliced mushrooms (optional)

  • 2 cups baby spinach or bok choy

  • Salt and pepper, to taste

  • 1 teaspoon chili oil or red pepper flakes (optional)

  • 3 green onions, chopped (for garnish)

  • 1 teaspoon sesame seeds (optional)

Instructions

  1. Prepare the broth:
Heat sesame oil in a large pot over medium heat. Add garlic and ginger; sauté for 1 minute until fragrant and lightly golden.

  2. Simmer the base:
Pour in broth, soy sauce, and rice vinegar. Stir and bring to a gentle simmer for 5–10 minutes to let the flavors blend.

  3. Cook the potstickers and veggies:
Carefully drop frozen potstickers into the simmering broth. Cook 5–7 minutes or until tender. Add mushrooms and spinach during the last 2 minutes of cooking.

  4. Season and finish:
Taste and season with salt, pepper, and chili oil (if desired).

  5. Serve:
Ladle into bowls and top with chopped green onions and sesame seeds. Serve hot and enjoy your cozy bowl of Potsticker Soup!

Notes

Swap in vegetable broth and veggie potstickers for a vegetarian option.
Add extra vegetables like carrots, edamame, or shredded cabbage for more color and nutrients.
Leftovers keep well for up to 2 days in the fridge, but reheat gently to keep dumplings from breaking.
