Ingredients

1 tablespoon olive oil

1 pound ground or sliced sausage ( turkey, or chicken)

1 small yellow onion, diced

2 garlic cloves, minced

3 cups Yukon Gold or russet potatoes, peeled and diced

4 cups chicken broth

1 cup heavy cream or half-and-half
-
½ teaspoon dried thyme
-
½ teaspoon smoked paprika

Salt and pepper to taste
Optional Add-Ins:

1 cup corn kernels (fresh or frozen)

½ cup shredded cheddar

Chopped parsley or chives
Instructions

Heat olive oil in a large soup pot over medium heat.

Add sausage and cook until browned, about 6–7 minutes. Drain excess fat if needed.

Stir in onion and garlic; sauté for 3–4 minutes until softened.

Add potatoes, thyme, paprika, and chicken broth. Bring to a boil.

Reduce heat and simmer 15–20 minutes, until potatoes are tender.

Stir in heavy cream and simmer for another 5 minutes. Season to taste.

Add optional corn or cheddar if desired. Garnish with chives or parsley and serve warm.
