Ingredients

3–4 boneless, skinless chicken breasts, boiled and shredded in large pieces

½ medium yellow onion, finely diced

1 (10.75 oz) can cream of chicken soup

16 oz sour cream

8 oz cream cheese, softened

1 tbsp poppy seeds

½ tsp salt

¼ tsp coarse ground black pepper

½ cup butter, melted
-
1½ sleeves Ritz or other buttery crackers, crushed
Instructions

Preheat oven to 350°F.

In a large mixing bowl, combine cream of chicken soup, sour cream, cream cheese, poppy seeds, salt, and pepper.

Stir in the shredded chicken and finely diced onion until well coated.

Spoon the mixture into a casserole dish and smooth the top.

Place crackers in a zip-top bag and crush them.

Sprinkle crushed crackers evenly over the top of the casserole.

Drizzle melted butter over the cracker topping. Add extra poppy seeds if desired.

Bake in the preheated oven for 25–30 minutes, or until the topping is golden brown and the edges are bubbly.

Serve warm on its own or over white or wild rice.
Notes
This dish can be made a day in advance—just cover and refrigerate until ready to bake.
Swap cream cheese with Greek yogurt for a lighter version.
Add frozen peas or cooked spinach for extra veggies.
