Description

Pesto Bruschetta Chicken is a fresh and flavorful skillet dinner made with juicy chicken breasts, melted mozzarella, homemade basil pesto, and a vibrant tomato bruschetta topping finished with balsamic glaze. It’s an easy, restaurant-style meal perfect for busy weeknights or casual entertaining.

For the Chicken

  • 4 large chicken breasts, pounded to even thickness
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 slices fresh mozzarella (such as Galbani Thin Sliced)
  • ½ cup basil pesto
  • ½ lemon
  • Balsamic glaze, for drizzling

For the Bruschetta Topping

  • 2 cups diced tomatoes
  • ¼ cup fresh basil leaves, thinly sliced
  • 2 garlic cloves, grated
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, combine diced tomatoes, basil, grated garlic, olive oil, red pepper flakes, salt, and pepper. Mix well and set aside.
  2. Pat chicken dry and rub with 1 tablespoon olive oil. Season both sides with garlic powder, Italian seasoning, salt, and black pepper.
  3. Heat remaining 1 tablespoon olive oil in a large skillet over medium heat.
  4. Cook chicken for 5–7 minutes per side, or until internal temperature reaches 165°F. Halfway through cooking, squeeze fresh lemon juice over the chicken.
  5. Reduce heat to low. Top each chicken breast with two slices of mozzarella. Cover skillet and cook until cheese melts.
  6. Remove from heat. Spoon basil pesto over each piece of chicken.
  7. Add a generous scoop of bruschetta topping and finish with a drizzle of balsamic glaze. Serve immediately.
