Description

This Pear and Gorgonzola Stuffed Chicken is an elegant, restaurant-worthy dish that’s surprisingly easy to make at home. Juicy chicken breasts are filled with creamy Gorgonzola cheese, sweet ripe pears, and fresh spinach, then baked to golden perfection. The result? A comforting, flavor-packed dinner that perfectly balances savory, sweet, and tangy notes — ideal for weeknights or special occasions alike.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts (thick enough for stuffing)

  • 2 fresh pears, ripe yet firm, diced

  • ½ cup Gorgonzola cheese, crumbled

  • 1 cup fresh spinach, chopped

  • 2 cloves garlic, minced

  • 2 tbsp olive oil (extra virgin preferred)

  • Salt and pepper, to taste

  • 1 tbsp balsamic vinegar (optional, for drizzling)

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) to prepare for baking.

  2. Make the Filling: In a bowl, mix together the diced pears, Gorgonzola cheese, chopped spinach, minced garlic, salt, and pepper until combined.

  3. Prepare Chicken: Slice each chicken breast on one side to create a pocket (be careful not to cut all the way through).

  4. Stuff Chicken: Fill each pocket generously with the pear and Gorgonzola mixture. Secure with toothpicks if needed.

  5. Sear: Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown.

  6. Bake: Transfer skillet to the oven and bake for 20–25 minutes, or until chicken reaches an internal temperature of 165°F (75°C).

  7. Serve: Remove from oven, let rest 5 minutes, and drizzle with balsamic vinegar before serving. Enjoy warm and melty!

Notes

  • Cheese Options: Blue cheese or goat cheese can substitute for Gorgonzola.

  • Add Crunch: Sprinkle chopped walnuts on top for texture.

  • Make Ahead: You can prep and stuff the chicken up to a day in advance.

  • Serving Tip: Pairs beautifully with roasted veggies, mashed potatoes, or a crisp green salad.
