Ingredients
For the Chicken:
1 pound boneless skinless chicken breast, cut into 1” chunks
1 large egg
½ tsp salt
1 pinch black pepper
½ cup cornstarch
¼ cup flour
1 tablespoon vegetable oil
Vegetable oil for frying
Honey Sesame Sauce:
¼ cup sweet chili sauce
¼ cup honey
⅓ cup water
2 tablespoons white vinegar
2 tablespoons lemon juice
⅛ tsp salt
2 teaspoons low sodium soy sauce
2 teaspoons cornstarch
To Finish:
1 pound string beans, trimmed
1 yellow bell pepper, sliced thinly
2 teaspoons sesame oil
1 teaspoon white sesame seeds
Instructions
In a medium bowl, whisk together egg, salt, pepper, and 1 tablespoon oil.
In another bowl, combine cornstarch and flour.
Heat about 2 inches of vegetable oil in a wok or deep pan to 375°F.
Dip chicken pieces into the egg mixture, then coat in the flour mixture.
Fry in batches for 3–4 minutes until golden and crispy. Drain well.
In a saucepan, combine all sauce ingredients and bring to a boil. Cook until thickened.
Drain most oil from the pan, leaving about 2 tablespoons.
Stir-fry green beans and bell pepper for 30 seconds.
Add the cooked chicken, sesame oil, and sauce. Toss quickly to coat.
Remove from heat, garnish with sesame seeds, and serve hot.
Notes
Want to make it lighter? Use an air fryer for the chicken, but note it won’t be quite as crispy.
This dish pairs beautifully with jasmine rice or cauliflower rice.
Store leftovers in an airtight container in the fridge for up to 3 days.
