Ingredients
1.5 pounds boneless skinless chicken thighs
For the Marinade:
½ cup plain Greek yogurt (full fat preferred)
¼ cup olive oil
Zest of 1 lemon
⅓ cup lemon juice
4–5 cloves garlic, pressed or minced
2 tablespoons dried Italian seasoning (salt-free preferred)
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
Instructions
In a large bowl, whisk together all the marinade ingredients until well combined.
Add the chicken thighs and toss to coat thoroughly in the marinade.
Cover and let marinate for at least 15 minutes (or up to overnight in the fridge for deeper flavor).
Preheat your oven to 425°F.
