For the Marinade:

  • ½ cup Dijon mustard

  • ½ cup honey

  • ¼ cup mayonnaise

  • 1 teaspoon fresh lemon juice

For the Chicken:

  • 4 boneless, skinless chicken breasts (about lbs)

  • 2 tablespoons butter

  • 8 ounces mushrooms, sliced

  • 1 tablespoon olive oil

  • 4 slices cooked bacon, chopped into 2-inch pieces

  • 2 cups shredded Colby Jack cheese

  • 2 tablespoons fresh parsley, for garnish (optional)

  • Salt and freshly ground black pepper, to taste


Instructions

  1. In a small bowl, mix Dijon mustard, honey, mayonnaise, and lemon juice. Reserve ¼ cup in a covered container and refrigerate for serving.

  2. Place chicken breasts in a zip-top bag and add remaining marinade. Coat well and refrigerate for 30 minutes or overnight.

  3. Preheat oven to 400°F.

  4. In a large oven-safe skillet, melt butter over medium-high heat. Add mushrooms and sauté until golden and tender, about 5–7 minutes. Remove and set aside.

  5. In the same skillet, heat olive oil. Sear chicken breasts for 5 minutes per side, until golden brown.

  6. Top each chicken breast with sautéed mushrooms, chopped bacon, and shredded cheese.

  7. Cover skillet and transfer to the oven. Bake 10–15 minutes, or until internal temperature reaches 165°F.

  8. Garnish with parsley and season with salt and pepper. Serve with reserved honey mustard sauce.

Notes

Marinating overnight intensifies the flavor.
Feel free to swap in cheddar or Monterey Jack if Colby Jack isn’t available.
