Instructions

Brown the Beef: In a large pot over medium-high heat, cook the ground beef until well browned, breaking it up with a spoon. Drain excess grease.

Sauté Aromatics: Add garlic, onion, garlic powder, onion powder, basil, oregano, salt, and pepper. Cook 5 minutes until fragrant and softened.

Build the Soup Base: Stir in crushed tomatoes, chicken broth, water, and tomato paste. Add the broken lasagna noodles. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes.

Add Spinach + Cream: Stir in the frozen spinach and heavy cream. Simmer uncovered for 5 more minutes until the soup thickens and flavors meld. Adjust seasoning if needed.

Serve: Add a slice of mozzarella to the bottom of each bowl. Ladle hot soup over it, then top with ricotta and Parmesan.
