This cozy One Pot Lasagna Soup delivers all the rich, cheesy flavor of classic lasagna in a warm, easy, one-pot meal. With tender lasagna noodles, savory beef, creamy ricotta, and a hearty tomato broth, it’s the perfect comfort dish for busy weeknights.

For the Soup

  • 1 lb ground beef

  • 3 garlic cloves, finely minced

  • 1/2 yellow onion, diced

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp dried basil

  • 1/2 tsp dried oregano

  • 1 tsp kosher salt

  • Freshly ground black pepper, to taste

  • 14 oz crushed tomatoes

  • 32 oz chicken broth (more if needed)

  • 1 cup water

  • 2 tsp tomato paste

  • 6 oz lasagna noodles, broken into pieces

  • 1 cup frozen chopped spinach

  • 1/4 cup heavy cream

For Serving

  • Ricotta cheese

  • 4 oz mozzarella cheese, sliced

  • Parmesan cheese (optional)


Instructions

  1. Brown the Beef: In a large pot over medium-high heat, cook the ground beef until well browned, breaking it up with a spoon. Drain excess grease.

  2. Sauté Aromatics: Add garlic, onion, garlic powder, onion powder, basil, oregano, salt, and pepper. Cook 5 minutes until fragrant and softened.

  3. Build the Soup Base: Stir in crushed tomatoes, chicken broth, water, and tomato paste. Add the broken lasagna noodles. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes.

  4. Add Spinach + Cream: Stir in the frozen spinach and heavy cream. Simmer uncovered for 5 more minutes until the soup thickens and flavors meld. Adjust seasoning if needed.

  5. Serve: Add a slice of mozzarella to the bottom of each bowl. Ladle hot soup over it, then top with ricotta and Parmesan.

Notes

  • Add extra broth when reheating—noodles absorb liquid over time.

  • Swap ground beef for turkey, chicken, or Italian sausage.

  • Gluten-free lasagna noodles work perfectly.
