This One Pot Gnocchi Chicken Pot Pie is creamy, hearty, and filled with tender chicken, fluffy gnocchi, and classic pot pie vegetables. A cozy comfort food dinner that comes together in just one pot—perfect for busy weeknights!


Ingredients

  • 2 carrots, sliced

  • 2 celery stalks, diced

  • 1 shallot or small onion, diced

  • 3 cloves garlic, minced

  • 8 oz mushrooms, sliced

  • 3 tbsp gluten-free flour (or regular flour)

  • 3 cups chicken stock

  • 1 ½ cups milk

  • 1 tsp Dijon mustard (optional)

  • 1 tsp Italian seasoning

  • Pinch of nutmeg (optional)

  • 1 lb potato gnocchi

  • 2 cups cooked chicken (rotisserie works great)

  • 1 cup frozen peas

  • 1 tsp poultry seasoning

  • ½ tsp dried thyme

  • 2 tbsp fresh herbs (parsley or thyme), chopped

  • Salt and pepper, to taste

  • Grated Parmesan cheese, for topping (optional)


Instructions

  1. Melt butter in a large, deep skillet over medium heat. Add carrots, celery, onion, and ½ tsp salt. Cook 6–8 minutes until softened.

  2. Stir in mushrooms and garlic; cook 5 minutes until mushrooms release their moisture.

  3. Sprinkle flour over vegetables and cook 2 minutes, stirring constantly.

  4. Slowly whisk in chicken stock, then milk, until smooth. Stir in Dijon, Italian seasoning, and nutmeg.

  5. Bring to a gentle simmer. Add gnocchi and cook uncovered for 4–5 minutes, stirring occasionally.

  6. Stir in chicken and peas. Simmer 3–4 minutes until heated through and thickened.

  7. Fold in fresh herbs. Season with salt and pepper. Let rest 5 minutes before serving. Top with Parmesan if desired.

Notes

Shortcut: Rotisserie chicken saves time and adds flavor.
To make ahead: Prepare base through Step 4, then add gnocchi and chicken before serving.
Swap in spinach, corn, or green beans for variety.
Whole milk gives the creamiest sauce, but 2% works too.
