Description

This Monterey Chicken is the ultimate flavor bomb—juicy grilled chicken breasts topped with sweet and smoky BBQ sauce, melty cheese, crispy bacon, and fresh toppings. It’s an easy, crowd-pleasing dinner you can whip up in 30 minutes!


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • ½ teaspoon salt

  • ½ teaspoon pepper

  • 2 tablespoons olive oil

  • 1 cup barbecue sauce

  • 1 cup shredded Monterey Jack cheese

  • ½ cup shredded cheddar cheese

  • 8 slices bacon, cooked and crumbled

  • 1 large tomato, diced

  • ¼ cup sliced green onions


Instructions

  1. Place the chicken breasts between two layers of plastic wrap and pound to an even thickness. Pat dry with paper towels.

  2. Season both sides of the chicken with garlic powder, paprika, salt, and pepper.

  3. Heat olive oil in a large oven-safe skillet over medium-high heat.

  4. Add the chicken and cook for 4–5 minutes. Flip, brush tops with BBQ sauce, and cook for another 4–5 minutes, or until internal temp reaches 165°F.

  5. While cooking, preheat your broiler to medium-high.

  6. Flip chicken one more time, brush with more BBQ sauce, and top each piece with Monterey Jack and cheddar cheese.

  7. Broil for 2–3 minutes until cheese is melted and bubbly.

  8. Remove from oven and let rest a few minutes.

  9. Top with crumbled bacon, diced tomatoes, and green onions. Serve hot!

Notes

Use a meat thermometer to ensure perfectly cooked chicken every time.
Swap in pepper jack for a spicy twist.
Want to lighten it up? Use turkey bacon or low-fat cheese.
