2 tablespoons olive oil

1 cup barbecue sauce

1 cup shredded Monterey Jack cheese

½ cup shredded cheddar cheese
-
8 slices bacon, cooked and crumbled

-
While cooking, preheat your broiler to medium-high.
-
Flip chicken one more time, brush with more BBQ sauce, and top each piece with Monterey Jack and cheddar cheese.
-
Broil for 2–3 minutes until cheese is melted and bubbly.
-
Remove from oven and let rest a few minutes.
-
Top with crumbled bacon, diced tomatoes, and green onions. Serve hot!
Notes
Use a meat thermometer to ensure perfectly cooked chicken every time.
Swap in pepper jack for a spicy twist.
Want to lighten it up? Use turkey bacon or low-fat cheese.
Great with mashed potatoes, rice, or over a salad!
