This Monterey Chicken One Pan Orzo is a cheesy, creamy, oven-baked dream. Made in one dish with juicy rotisserie chicken, spinach, orzo, and crispy onions—it’s the ultimate comfort food for busy weeknights.
Ingredients
1 (10.5 oz) can cream of chicken with herbs
16 oz container sour cream
2.5 cups chicken stock
5 garlic cloves, minced
1 tsp all-purpose seasoning (see notes)
1/2 tsp salt
1 tsp freshly cracked pepper
3 cups fresh spinach leaves, torn (or 1 box frozen chopped spinach, thawed and drained)
16 oz dry orzo
3 cups Monterey Jack cheese, freshly grated
2 cups rotisserie chicken, shredded
1 (6 oz) can French’s crispy fried onions
Butter or nonstick spray for greasing the dish
Instructions
Preheat oven to 350°F and grease a 9×13 casserole dish with nonstick spray or butter.
In the casserole dish, whisk together cream of chicken, sour cream, chicken stock, garlic, seasoning, salt, and pepper until smooth.
Stir in spinach, rotisserie chicken, orzo, and half of the shredded cheese. Mix well to distribute evenly.
Top with remaining cheese and an even layer of crispy fried onions.
Cover with foil and bake for 25 minutes.
Remove foil and bake uncovered for an additional 10–15 minutes, or until the top is golden and bubbly.
Let sit for 5 minutes before serving. Enjoy!
Notes
For a spice kick, add 1/4 tsp red pepper flakes or a diced jalapeño.
You can sub fresh spinach with thawed frozen—just make sure to squeeze out excess moisture.
Use freshly grated cheese for best melt and flavor.
if your orzo seems undercooked after baking, cover again and bake 5-7 more minutes.
