Description

Mississippi Mud Chicken is an easy baked chicken dinner made with BBQ sauce, creamy ranch, melted cheddar cheese, and crispy fried onions. Comfort food made simple and irresistible.


Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt and black pepper, to taste

  • ½ teaspoon garlic powder (optional)

  • ½ teaspoon smoked paprika (optional)

  • ½ cup barbecue sauce

  • ½ cup ranch dressing

  • 1 cup shredded cheddar cheese

  • 1 cup crispy fried onions (store-bought)


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.

  2. Season the chicken breasts on both sides with salt, pepper, and optional garlic powder or smoked paprika.

  3. Place the chicken in the prepared baking dish. Brush each piece with barbecue sauce.

  4. Spoon ranch dressing evenly over the chicken.

  5. Sprinkle shredded cheddar cheese on top of each breast.

  6. Bake uncovered for 25–30 minutes, until the chicken reaches an internal temperature of 165°F and the cheese is bubbly.

  7. Remove from the oven and immediately top with crispy fried onions.

  8. Let rest for 5 minutes before serving.

Notes

Pound thick chicken breasts slightly for even cooking.

Add the fried onions after baking to keep them crunchy.

For a smoky kick, use smoked cheddar or spicy BBQ sauce.

Great served with mashed potatoes, rice, or roasted veggies.
