Description

Crust:

  • 1/4 cup crushed graham crackers

  • 1/4 cup melted butter

Cheesecake Filling:

  • 8 oz cream cheese, softened

  • 1/2 cup sugar

  • 1 tsp vanilla extract

  • 1/2 cup sour cream

  • 2 large eggs

Topping:

  • Red and green sprinkles


Instructions

  1. Preheat oven to 325°F (160°C).

  2. In a bowl, mix softened cream cheese and sugar until smooth.

  3. Add vanilla extract and sour cream; mix well.

  4. Add eggs one at a time, mixing gently after each addition.

  5. In a separate bowl, combine graham cracker crumbs and melted butter to form the crust.

  6. Press the crust mixture evenly into mini cupcake liners.

  7. Pour cheesecake filling over the crust, filling each liner about ¾ full.

  8. Bake for 20 minutes, or until the centers are set but still slightly jiggly.

  9. Let cool completely, then refrigerate for at least 2 hours.

  10. Add festive red and green sprinkles before serving.
