Description

Ingredients

  • 4½ cups chopped cooked chicken (rotisserie works great)

  • 4 oz cream cheese, room temperature

  • 1 cup cottage cheese

  • ½ cup sour cream

  • 1 (10.5 oz) can unsalted cream of chicken soup

  • ¼ tsp garlic powder

  • ¼ tsp dried onion powder

  • 1 sleeve Ritz crackers, crushed

  • 5 Tbsp butter, melted


Instructions

  1. Preheat oven to 350ºF. Lightly spray a 9×9-inch baking dish with cooking spray and set aside.

  2. In a large bowl, combine chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Mix until smooth and creamy.

  3. Spread the chicken mixture evenly in the prepared baking dish.

  4. In a small bowl, stir together crushed Ritz crackers and melted butter until well coated.

  5. Sprinkle the cracker topping evenly over the chicken mixture.

  6. Bake uncovered for 30–40 minutes, or until the topping is golden and the casserole is bubbly around the edges.

  7. Let cool for 5–10 minutes before serving.
