Description

This Million Dollar Chicken Casserole is the ultimate comfort food – creamy, cheesy, and loaded with tender chicken. It’s topped with a buttery, crispy cracker crust, making it a perfect crowd-pleaser for family dinners, potlucks, or weeknight meals!

Ingredients

Scale

For the Casserole:

  • 3 cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried parsley
  • Salt and pepper, to taste

For the Topping:

  • 1 cup crushed Ritz crackers (about 1 sleeve)
  • 4 tbsp unsalted butter, melted
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat and Prepare:
Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish. Set it aside.
  2. Mix the Casserole Filling:
In a large mixing bowl, combine the softened cream cheese, sour cream, cottage cheese, mayonnaise, garlic powder, onion powder, dried parsley, salt, and pepper. Mix until smooth and creamy.
  3. Add Chicken and Cheese:
Stir in the shredded chicken, mozzarella cheese, and cheddar cheese until well combined.
  4. Assemble the Casserole:
Spread the creamy chicken mixture evenly into the prepared baking dish.
  5. Prepare the Topping:
In a small bowl, mix the crushed Ritz crackers, melted butter, and grated Parmesan cheese until the crackers are coated.
  6. Top and Bake:
Sprinkle the cracker topping evenly over the chicken mixture. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbling and the topping is golden brown.
  7. Cool and Serve:
Let the casserole cool for 5-10 minutes before serving to allow the flavors to meld and the casserole to set slightly. Enjoy warm!

Notes

  • Make it ahead: You can assemble this casserole ahead of time and refrigerate it (without the topping) for up to 24 hours. Add the topping just before baking.
  • Substitutions: Swap cottage cheese with ricotta for a creamier texture.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
